Nice write up! My Hubby's relatives live on Texel so we spend more of our time outside Amsterdam than in. Texel is very family friendly for biking, the beach (be ready to explain topless but GREAT kite flying), the Slufter, the Ecomare and the shrimp boat ride. Our guys were older for our last visit (2011) but we still spent more time outside Amsterdam than in. We visited Gouda (making the Cheese Market reenactment day was a winner!) and Royal Delft. We did the painting tour, the boys LOVED painting the tiles which were fired and mailed to us a couple weeks later for a very special memento.

The Rijksmuseum (they like art in controlled doses) went over well after clambering about on the I Am Amsterdam sculpture on the Museumplein. The Anne Frank house had a surprising impact as they had learned about WWII in school and this really personalized it for them. You are spot on about the Canal Boat tours, best taxi around. Ah the patat met - fries with mayo... kids do like them but remember the Dutch disapprove of people walking around eating or drinking. You can do it but you tend to get looks, my Dutchie hubby makes us hang close to the Febo (they are the best of course!) while we eat. We haven't been to the Het Scheepvaartmuseum so that will definitely have to be added to our list for next time! Thanks!
